My Favorite Oatmeal Breakfast

  • ¼ cup steel oats
  • 1 cup water
  • ½ large apple or 1 small - cut into chunks
  • 1 Tbs. flaxseed meal or ground flaxseed
  • soy milk or low fat milk
  • cinnamon

     

     

Bring the water to a rapid boil. Add oats and apple. Simmer for 20-30 minutes, until water has evaporated and oats are cooked. Pour into a bowl. Add flaxseed and milk. I add just enough milk to cool the oats. If you like it creamier, you can add up to ½ cup of milk. I sprinkle some cinnamon on top and enjoy. This is truly delicious and provides one half the amount of fiber needed in a day.

You can experiment with this recipe, to your taste. Sometimes, instead of cinnamon, I add a few drops of honey or real maple syrup. Yum!

The flaxseed gives the oats a wonderful nutty flavor. Cooking the apple with the oats sweetens them so there is very little to no sugar needed.

This makes one serving.

* A word of caution. If you are not accustomed to a diet high in fiber, start out eating one half of this recipe, a few times a week. Gradually, incorporate more fiber into your diet.
